Avocado Recipes

Quinoa Avocado Wrap                   
4 Nori wraps (seaweed wraps)
½ cup white quinoa, washed
1 avocado, pitted and cut into slices
1 red bell pepper, cut into slices
1 ½ cup alfalfa sprouts
1 cup baby carrots, cut into slices

Boil and simmer the quinoa (covered) for 15 minutes
Chopped up the veggies
Spread the cooked quinoa thinly onto the Nori wrap, left 1/2”at the bottom to sealed
Add alfalfa sprouts as a faux-lettuce
Place the peppers, carrots and avocado slices horizontally down the center of the wrap

Avocado Pudding
2 bananas, soft and lightly spotted
1 avocado, pitted and sliced
1 ½ tbsp. carob powder, or pure cocoa powder
2/3 cup almond milk, unsweetened
3 tbsp. agave nectar, or 4 tbsp. maple syrup
Slices of your favorite fruit, to garnish/dip (optional)

Insert these ingredients, in order, into a food processor or blender .
Blend to your desired thickness
Pour into bowls and garnish with your favorite fruit and enjoy!
